What to expect
This version pairs sweet-savoury rice with vegetables, chilli and sharp pickles. It follows the single primary recipe credited below, rather than the previous unsourced sample. Rice & Sizzle has not cooked or tested it; the illustration does not show a finished result.
Ingredients to know
Kecap manis is Indonesian sweet soy sauce. It supplies sweetness as well as seasoning; ordinary soy sauce is not an equivalent swap. Keep the two sauces distinct when shopping.
Acar is the accompanying vegetable pickle. Keep its diced vegetables and measured salt separate from the sliced stir-fry ingredients. The ingredient list includes the water used in the source’s method.
Measurements: use the ml amounts for oil and sauces. The source’s Australian tablespoon is larger than the 15 ml tablespoon used on this site. The sugar measure has been converted to two 15 ml tablespoons. Caster sugar is also sold as superfine sugar.
The primary source explicitly allows vegetable stock powder in place of mushroom powder. Other ingredient substitutions have not been checked for this version, and no claim of an identical flavour is made.
For a source-based comparison, read Kecap Manis Substitutes: Options for Fried Rice and Noodles. Its alternatives have not been tested in this recipe and do not establish a replacement amount for the kecap manis here.
Allergen notes
Soy sauce and kecap manis contain soy and may contain wheat, depending on the product. Check the labels on both sauces, stock powder and prepared fried shallots for additional allergens or cross-contact information. No gluten-free or other allergen-free claim is made.
Handle cooked rice safely
The UK Food Standards Agency advises cooling cooked rice quickly, ideally within one hour, then refrigerating it and using it within 24 hours. Reheat rice only once, until steaming hot throughout, and serve immediately. Safe reheating does not undo unsafe storage. Its official rice guidance is linked in References; follow applicable local guidance too.
Start with safely chilled rice that has not already been reheated. Since frying is its reheating step, this page does not recommend saving the finished fried rice for another reheating.
On the side
The acar is already part of the recipe. For another vegetable side, see our lime and sesame cucumber salad, which is also an untested reference sample and introduces sesame as an additional allergen.
